Rich in both colour and flavour, this bolognese recipe is prefect with spaghetti or used as the meat sauce for lasagne. Alternatively, mix it through any type of pasta, top it off with grated cheese and bake until golden.
Ingredients
1 onion
1 Tbsp olive oil
500g beef mince
2 carrots
3 sticks celery
2 tsp ground paprika
3 Tsp mustard
2 tsp oregano
2 tsp basil
2 tsp marjoram
2 tsp salt
2 Tsp sugar
1 can crushed and sieved tomatoes
1 can tomato puree
3 Tsp tomato paste
Serves 4-6+
Method
Peel and dice onions, place in large frying pan along with olive oil and cook on low heat until translucent and beginning to brown.
Add mince to frying pan, increase heat, and brown - making sure you break up the mince during cooking.
Peel and finely dice (or mince) carrots and celery. Add to mince and onions.
Season mince and vegetables with paprika, mustard, oregano, basil, marjoram, salt and sugar.
Add crushed and sieved tomatoes, tomato puree and tomato paste to mince and vegetables, cover and cook until vegetables have softened and flavours have blended. (At minimum 30 mins - 1-2 hours ideal.)
Taste and adjust spices to suit your preference.
Use as topping or filling for your favourite Italian dish: Spaghetti Bolognese, Lasagne, Pasta Bake...
